Chicken Caesar Burgers

Jon and I don’t have Caesar Salad often but sometimes it’s nice to mix it up from Garden Salad. It’s hard though to sell a salad to Jon as a meal. So I’ve made the Caesar salad as a topper to these Chicken Caesar Burgers! We’ve kept the burger naked (aka bun-less) and topped the patty instead with a slice of tomato, red onion, our salad slaw and a Parmesan crisp (cus we’re fancy like that 😉 This is one way to amp up your Caesar game this spring/summer!

Chicken Caesar Burgers (makes 6 large burgers/servings):
2 pound ground chicken
2 garlic cloves
2 teaspoon sriracha
4 tbsp of homemade caesar dressing (see recipe below, you could use store bought but it may increase the fat content of the meal quite a lot)
1 tablespoon fresh parsley, chopped (dried works too)
2 tablespoons chopped green onions
1/4 cup red onion, diced
1/2 teaspoon fresh lemon juice
1 teaspoon fine sea salt
1/2 teaspoon black pepper
1 teaspoon red pepper flakes
1/2 teaspoon onion powder
6 tablespoon grated Parmesan cheese


Salad and Toppings:
2 cups Shredded Romaine Lettuce
2 tbsp homemade Caesar dressing (see below, again can substitute store bought but will change macros)
1 large tomato, sliced
6 slices of red onion


Caesar Dressing (makes 20 x 1tbsp servings, we use a total of 6 tbsp in this recipe so you will have leftovers!):
1/2 cup olive oil mayo
1 tsp dijon
2 tsp olive oil
1 tsp apple cider vinegar
1 clove garlic minced
1 tsp lemon juice
1/2 tsp anchovy paste
pinch each sea salt and black pepper
6 tbsp water


1) Preheat the oven to 350 degrees and set one baking tray with a baking cooling rack on top. Oil the cookie tray and set aside. Combine all burger ingredients in a medium sized bowl, mix well and form into 6 large patties. Place the patties on the oiled baking cooling rack then put in the oven and bake 25 mins or until cooked through (no pink remains).
2) Drop tablespoon full portions of Parmesan cheese on the baking sheet lined with parchment paper with space between them. Bake at 350 degrees for 6 minutes or until slightly golden. Cool completely then use a flipper to remove them from the sheet and place on a plate.

3) Combine all the Caesar dressing ingredients (except the water) in a dressing jar or mason jar and shake to mix. Add the water slowly and decide how thin/thick you want the dressing (omit some water if you like or add more). Toss the lettuce and 2 tbsp of dressing.


4) ASSEMBLY TIME! Place a burger on your plate, top with a slice of tomato, then a slice of red onion, 1/6 of the Caesar salad and 1 Parmesan crisp. Enjoy with a side of baked rosemary fries like we did (not included in macros) and more salad on the side if you like 🙂
