One Pot Turkey Taco Bake

Since we don’t have a dish washer, some days I like to be pretty strategic with how many pots and pans I use when making a new recipe. This one pot skillet dish is easy to make AND easy to clean up after too! Not to mention it’s pretty tasty and packed full of protein and veggies. Think Tacos without the shell just the delicious filling 😉


One Pot Turkey Taco Bake (makes 8 servings):
1 tablespoon coconut oil
2 garlic clove, minced
1 zucchini, diced
1 large carrot, finely diced
2 bell peppers, diced
1 onion, diced
2 pound extra lean ground turkey
2 tablespoon chili powder
2 tablespoon smoked paprika
1tbsp garlic powder
2 teaspoon sea salt (or to taste)
Pinch black pepper
2 cups canned crushed tomatoes
5 ounce can green chiles
1 can black beans
4 cups fresh spinach

1 tbsp Tabasco (or more to taste)

3 tbsp Organic Green Sriracha (from Costco, or regular if you don’t have green, and more if you like it spicier)
1/2 cup shredded white cheddar cheese
1/2 cup chopped green onions

1) Heat the oil over medium-high heat and saute the onion, carrot and garlic for 2 mins. Then add in the zucchini and peppers and let cook until vegetables start to soften (about 5-7 mins).

2) Add in turkey and spices. Cook until no longer pink then add the beans, chilies, Tabasco, Sriracha and tomatoes. Simmer for about 10 mins, taste and adjust seasoning then add the spinach in to wilt.

3) Top with cheese, put under the broiler for 2-4 mins to melt/brown only slightly, then sprinkle with green onions and serve piping hot!
