Who doesn’t love a Chinese spring roll? Well we are bringing you all the flavours of that delicious spring roll in a weeknight friendly dinner recipe! Think savoury sausage meat (lightened up with the addition of turkey meat), crisp cabbage, green onions and notes of sesame and ginger all in one little bowl. This is such a simple easy dinner you can whip up and actually tastes like the filling in an Egg Roll! Okay yes it’s missing the crunchy deep friend outer shell, but we aren’t magical over here! We like to think it will fill that Asian craving without the high fat price tag that comes with ordering the original 🙂
Spring Roll in a Bowl (makes 6 servings):
1 lb ground pork sausage
1 lb extra lean ground turkey
4 cups raw shredded green cabbage
1/2 cup chopped/shredded carrot
4 cloves garlic, minced
4 tablespoon ginger, minced
3 tablespoon soy sauce (or more to your liking)
1 tbsp sriracha (if you like it spicy more, if you don’t none at all!)
1/4 cup chopped green onions
1 tablespoon sesame oil
1 tbsp cornstarch (less if you don’t have a lot of liquid in the bottom of the pan)
1) Heat a large skillet over medium high heat with 1/2 tbsp of sesame oil. Cook the sausage and turkey through so no pink remains (about 7 mins).
2) Add the carrots, cabbage, garlic, ginger and soy sauce to the skillet. Cook for 4-5 minutes or until cabbage has softened a bit.
3) Add in 1 tbsp of corn starch which will thicken up any liquid on the bottom of the pan. Add in the green onions and the remaining sesame oil. Stir and serve with a side of jasmine rice and some greenery!
