Turkey & Sweet Potato Bowl

Alright we are 2 weeks into our Whole Food Detox and we are trying to keep it interesting for everyone involved (as well as ourselves of course!). Tonight’s dinner is a quick easy one. All you have to do is throw some onions, garlic, veggies, ground turkey, spices, hot sauce, tomato and sweet potatoes together and BAM you have a Turkey and Sweet Potato Bowl! Top with a dollop of plain Greek yogurt, cilantro and green onions and you have a quick meal on any week night.

Turkey & Sweet Potato Bowl (makes 6 servings):

2lb extra lean ground turkey

600g of sweet potato, diced

1 cup chopped onions

4 cloves of garlic, finely chopped 

1 tsp coconut oil

1 medium zucchini, diced

1 red pepper, diced

1 orange pepper, diced

1 cup of salsa

1 cup of canned, crushed tomatoes

1 tbsp smoked paprika

1 tbsp chili powder

1 tbsp crushed chili flakes (less if you don’t like it spicy)

1 tbsp ground coriander

1 tbsp ground cumin

1 tbsp Italian seasoning

1 tsp each of salt and pepper

1 tbsp of Tabasco or other hot sauce of choice

1/2 cup of chopped cilantro

1/2 cup of green onion, sliced

1) Put the diced sweet potatoes in a pot with a little water and bring to a boil. Once boiling, reduce heat to about a 4 and cook covered until softened but not mushy. Set aside. 

2) Heat the coconut oil over medium high heat and saute the onions and garlic until softened. Then add in the diced vegetables and cook for 2-5 mins until slightly softened. Then add in the ground turkey and break apart while browning. Add in the spices, herbs, salt and pepper and stir until meat is cooked. 

3) Pour in the salsa and crushed tomatoes, add the hot sauce to taste, cilantro and then add in the cooked potatoes. Stir it all up, check for taste (add more hot sauce, salt or pepper) then serve in a bowl topped with green onions and a dollop of plain greek yogurt (not included in macros). Pure tastiness all in one bowl 🙂
