We are jazzing up those sweet potatoes by making some TURKEY STUFFED Sweet Potato Skins. These would be great topped with some avocado, a little salsa, maybe even some green onions and cilantro if you like! You could even get really spicy with a hot chili in the mix. Make it your own and make it tonight!
Turkey Sweet Potato Skins (makes 6 servings):
2lb extra lean ground turkey
900g sweet potato
1 tbsp olive oil
2 cloves of garlic, finely diced
1 tbsp ginger, finely diced
1/2 cup of onion, diced
1 red pepper, finely diced
1/2 cup of frozen corn kernels
1 tsp ground coriander
1 tsp ground cumin
1 tbsp herbs de provence
1 tsp sage
1 tbsp crushed chili flakes
1 cup of salsa
2 tbsp hot sauce
salt and pepper
1) Preheat the oven to 375 degrees and bake the potatoes (which you tossed in 1/2 tbsp olive oil and salt) for 45-55 mins or until cooked through. Set aside and let cool. Once cooled, slice in half and spoon out most of the inside of the potato. Put it into a bowl and mash it well.
2) Heat the remaining 1/2 tbsp of olive oil in a saute pan and saute the onions, garlic and ginger for 2 mins. Then add in the diced red pepper and corn. Cook a further 2 mins. Then add in the turkey and cook until no longer pink with the herbs, spices, crushed chilis, salt and pepper. Once cooked add in the salsa and hot sauce.
3) Final addition is the mashed sweet potato. Mix everything together, add seasonings to your taste. We enjoyed this with some kale chips (not included in the macros) which was a great combo!
