Okay the picture actually doesn’t do this one any justice, this dish was RICH, NUTTY and like nothing we’ve made recently. All in all (and yes I know I say this a lot), it’s a winner! It’s cooked on the stove on simmer for a good hour and a half so the meat is fall off the bone tender and it thickens up nicely giving in a rich creamy finish. A little more fiddly as you have to get the meat off the bone, but definitely worth it!
African Peanut Stew (makes 8 servings):
1.5lb pounds chicken legs (bone in skinless)
1.5lb chicken thighs (bone in skinless)
1 Tbsp coconut oil
1 large onion, chopped
3-inch piece of ginger, finely diced
6 garlic cloves, finely diced
2 medium sweet potatoes (800g), peeled and cut into chunks
1/2 a large can of crushed tomatoes (14oz)
4 cups of organic chicken stock
1 cup all natural peanut butter
1/2 cup peanuts (roasted)
1 tbsp ground coriander
2 teaspoon cayenne (less if you don’t like it spicy, more if you want to amp up the heat!)
2 tbsp hot sauce
Salt and black pepper
1/2 cup of cilantro, chopped
4 cups raw spinach
1) Heat the oil in a large pot over medium high heat and brown the chicken on both sides in batches. Remove and set aside on a plate as you go.
2) Once you have removed all the chicken from the pot, add the onion, garlic and ginger and saute for 2 mins or until starting to soften and brown. Then add in the chicken stock, tomato, peanut butter, peanuts and spices (ground coriander, cayenne and salt and pepper). Stir until smooth. Then toss in 1/2 the diced sweet potato (reserving the other half to add later). Mix to combine then add the chicken back into the mixture. Once this is boiling, reduce the heat to a simmer and cook for 1 hours.
3) After 1 hour, add the other 1/2 of the diced sweet potato, cover and cook for 30 more mins or until the potato is cooked. Then take the chicken out of the pot and set aside to cool slightly. Shred the chicken off the bone and discard the bones. Add the chicken back in with the spinach and cilantro, adjust seasoning if needed and then swerve in bowls. Enjoy every rich and delicious bite!
